White Chicken Chili


I know I sound like a broken record but it is still hot in Arizona. Not "I'm melting" hot, but still hot enough that we are having a hard time recognizing it is fall by the time 3:00 pm rolls around. This is why I have decided I would just pretend it is nice and crisp outside and I started treating my meals as such. My youngest has also decided he had enough of this heat and started wearing jeans to school again, despite the fact that he is a sweaty mess by the time he arrives back home. He pointed to the calendar the other day and told me that he HAS to wear long pants after fall break because that's just what you do. Seriously, how can I argue with this logic?

I found this recipe probably a little over a year ago on Tasty Kitchen and it caught my eye right away. After a little bit of tweaking the recipe, it has come to be a family favorite, especially after a long day of school and soccer practice in the evening. The chili comes together quickly and while I realize you could make this with dry beans that have been soaked and cooked, it would defeat the convenience of the recipe for me, but if that's what you like to do, I say go ahead and knock yourself out. Chicken breast is cubed and browned along with onion and garlic powder in a big pot. The drained and rinsed beans are added along with chicken broth, green chilies and spices. The mixture is simmered for about 30 minutes and for the final touch sour cream and heavy cream are added. This ensures a perfect balance of spiciness and creaminess.

The soup has quite a kick, so if you like it a little milder, make sure to use less chilies or leave the cayenne pepper out. I like to serve this chili with tortilla chips and a little sprinkling of cheddar cheese, but a good cornbread on the side would be just as delicious. This is one of those meals that never has leftovers in our house and my kids fight over the last few spoons. It is also not as thick as a traditional thick chili, think of it more like a hearty soup with a kick. The spiciness of this dish will warm you nicely on a chilly evening, so make it tonight and get yourself all toasty warm!


White Chicken Chili

Ingredients:

1 1/2 pounds boneless, skinless chicken breast, cubed
1 whole medium onion, chopped
3/4 teaspoon garlic powder
2 tablespoons olive oil
3 cans (15.5 oz) Great Northern Beans, drained and rinsed
2 cans (14.5 oz) chicken broth
3 cans (4 oz) chopped green chilies
1 1/4 teaspoon Kosher salt
1 1/2 teaspoons dried oregano
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 cup sour cream
1/2 cup heavy cream
Shredded cheddar cheese, for serving  (optional)


Preparation:

Heat oil in a large pot. Saute chicken, onion, and garlic powder until chicken is no longer pink. Add beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Remove from heat and stir in sour cream and cream. Serve garnished with cheese if desired.

  1. It's funny how we only focus on the weather in our own little areas-- I'm sure AZ is still boiling! When we lived in HI, we went through the same thing. Hearty meals didn't happen that often! This soup looks great, I love white chicken chili!

  2. This is the perfect chili for our weather! We had the first frost. The days are still very pleasant but it gets cold in the evening. So no pretending necessary!

  3. I have known of white chili for a number of years, but have never made it or eaten it. Maybe it's time for that to change. Yours sure looks good, and your recipe sounds great for a week night supper.

  6. I used to live in AZ, so I know of which you speak! But when you get into mid-October, it's hard to resist the chilies and stews and soups that the rest of the world is enjoying. Your chili looks delicious!

  10. I'm feeling you with the heat! It was ninety degrees in Austin, and I'm telling myself that fall weather will eventually come! Despite the lingering heat, we are still making soup and other fallish recipes. I can't resist! This soup/chili looks delicious...and it would be even better after a cool, fall day :-)

    I am a big fan of great northern beans. I love your flavor profile with some bold spices and the chilies. Smart addition of the creams to cut through a bit. All in all a wonderful bowl of chili.

  18. It has been a chilly, rainy day here today- your chili would have been perfect! I love white chicken chili, but it's not hub's favorite. I make it anyway though and I always have plenty left over for my lunches! Yours looks delicious!

  21. I like your attitude about just doing Fall inspired dishes already...we can't wait for the season to arrive when Mother nature doesn't cooperate. :) I'm ready too, for cozy comfort foods and traditional seasonal fare.

  24. Even though this recipe is widely known, I was glad to see you put your own spin on it with the addition of cream. I have seen white chilis before that just look broth-y and runny, but this looks thick and rich, as it should!

  26. I love White Chicken Chili! And while I have no sun and no heat, I'm still not embracing fall after our lack of summer. Sounds like we lead similar lives... my son has also switched to jeans and this will would be perfect to have ready after soccer practice!

  28. I've been looking for a good white chicken chili recipe. I hear you about the heat. It's almost always some kind of hot in Miami. I know the weather is getting slightly more pleasant by how often my AC cycles on and off. In the summer it never cycles off. Lately it's been turning off a few times a day ;). I'll pretend those times aren't early morning/evening!

  29. Wow! I just made a giant batch of this - of course it figures that Nashville is having a freakishly warm day in February. But this is probably the tastiest white chicken chili I've ever had! Usually they are so bland! Of course, when I grabbed the 3 cans of green chilies off the shelf - I accidentally grabbed a can of jalapenos. But all is well - I love a good forehead-sweat when eating chili. Thanks for sharing!

  31. I made this and it's fantastic! However, the measurements in the oregano and salt were really high. Came out a little too salty and the oregano over-powered. I used 1/2 tsp of each the second time and it was perfect. Thanks for sharing - I'm making it again tomorrow... weather channel said it might snow. :)
